You can create as many different quote statuses as you need but the right value has to be put with the appropriate status for it to work properly. This can be done in Admin>Sales>Quote Status. The columns as shown below are described as follows,

Name; Status name.
Accepted; will allow you to generate an invoice.
Value; will populate the total value of the quotes.
Editable; if this value is set to 0, the save button is disabled. This is so, for example, you don’t change an already accepted quote.
